الوربات، الشعبيات أو رقائق الكلاج، أياً كان اسمها فهي كلها تؤشر على دخولنا في شهر رمضان الكريم. تشتهر منطقة الشام والعراق بالوربات وتُحضر بطرق كثيرة سواء أكانت بحشوات مختلفة أو بطرق طبخ مختلفة.
تقريباً، تعد الوربات الحلوى المفضلة لدي في شهر رمضان بما أنني لست من عشاق القطائف أو الأشياء الشديدة الحلاوة أجد الوربات ذات حلاوة متوسطة خصوصاً إذا لم تُغرَّق بالقطر أو إذا اكتفيت بملعقة قطر صغيرة عليها.
المقادير:
1- عجينة كلاج، فيلو باستري، أو عجينة بقلاوة. بين ثماني إلى عشرة ورقات
2- زبدة
3- قطر؛ للحصول على وصفة القطر اضغط هنا
4- مكسرات مطحونة للتزيين؛ فستق حلبي
مقادير الحشوة:
1- جبنة ريكوتا، للحصول على وصفتها اضغط هنا (نصف كمية الجبن تُستخدم لهذه الوصفة)
2- علبة قشطة
طريقة عمل الحشوة:
1- بعد أن تخرج جبنة الريكوتا من الحليب وتصفينها أضف عليها بشكل سريع وهي لا تزال سانخة علبة قشطة أو المقدار الذي تراه مناسباً ثم قم بخلطها مستخدماً الخفاقة الكهربائية. دعها تبرد في الخارج ومن ثم ضعها لعدَّة ساعات في الثلاجة.
طريقة عمل الوربات بالقشطة:
1- تُذوب كمية جيدة من الزبدة. ما يقارب ربع قالب.
2- تدهن الصينية التي ستستخدم بالزبدة.
3- تُدهن كل طبقة من عجينة الفيلو باستري أو الكلاج (جلاش) بالزبدة ومن ثم يتم صف كل الطبقات فوق بعضها البعض. لا تدهن الطبقة الأخيرة.
4- تقسم إلى مربعات ويتم حشو كل مربع بملعقة إلى ملعقتين من القشطة التي سبق تحضيرها ثم تثنى لتصبح على شكل مثلت.
5- تدهن بالزبدة وتُدخل إلى فرن محمى مسبقاً على درجة حرارة مثتين مئوية لمدة ثلث ساعة أو حتى تكتسب لوناً ذهبياً.
6- بعد أن تُخرج من الفرن تسقى بالقطر وتزين بالفستق الحلبي وتُقدم.

Warbat, Shaabyat or cream filled phyllo pastries are all indicate that we are in the holy month of Ramadan. The Levant region and Iraq are mostly known for the warbat and it’s usually filled with different fillings and can be cooked in various ways.
Warbat are mainly my favorite dessert for Ramdan, I am not really a big fan of Katayef; An Arabic dessert that it’s commonly served in Ramdan, or too sweet desserts, and thus I prefer Warbat as they can be mild sweet if you add less sugar syrup to them. I usually prefer desserts that are cooked without sugar so I can manage how much syrup, honey or sugar to intake.
Ingredients:
1- Phyllo pastry dough; 8 to 10 sheets.
2- Butter, around 60 grams.
3- Sugar syrup; you can find the recipe here.
4- Ground pistachio or other preferred nuts for garnish.
Filling ingredients:
1- Ricotta cheese, you can find the recipe here (use half of the cheese for this dessert)
2- Extra thick cream or table cream (1 can; 170 grams)
Filling method:
1- Once the milk curdles and you get the cheese out of it, add the extra cream / table cream to the cheese and whisk using an electronic whisk. Let it cool outside and refrigerate it for a couple of hours before use.
Warbat method:
1- Melt the butter.
2- Grease the pan with some melted butter.
3- Take one sheet and brush it with melted butter. Add another sheet on top and brush with melted butter as well. Keep adding and brushing with butter till the last sheet; don’t brush the last one.
4- Cut into squares and add one to two Tbsp of the filling, depending on the size of the square, fold it from opposite sides so you it forms a triangle.
5- Brush butter across the top half of each triangle. Bake at 200 C for 20 minutes or until golden and crispy.
6- Apply the sugar syrup on top of the hot Warbat and serve it with pistachio on top.
